I was wondering if anyone had or knew of baroque guitar plans other than the one sold by GAL (I don't want to build a guitar with arched back). I know of the Stradivari plans, but I can't imagine paying nearly $100 just for a set of plans.

Use the GAL but build it as a flat Back. Pretty straightforward really.
The only others that I know of are museum plans: Oxford ashmolean and Cite Musique in Paris.

You have probably seen this, but just in case, GAL plans suggested on the Crane site, build guide here http://www.crane.gr.jp/MakingBaroqueGuitar/index.html
Also free plans for later guitars http://www.crane.gr.jp/CRANE_etc/CRANE_Plan_E.html

The name catgut is confusing. There are two explanations for the mix up.

Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.
